Lemon Bars instructions
- Preheat oven to 350.
- FOR THE CRUST.
- Cream butter and sugar in stand mixer with paddle attachment.
- Combine flour and salt with mixer on low speed.
- Add butter until just mixed.
- Dump dough onto a well floured surface and gather into a ball.
- Flatten dough into a 13 x 9 baking dish, building up 1/2 inch on all sides to form a well.
- Chill for 1 hour, then bake for 15 to 20 minutes or until lightly brown.
- Cool on a wire rack and leave oven on.
- FOR THE FILLING.
- Whisk eggs, sugar, zest, lemon juice and flour.
- Pour over cooled crust and bake for 30 to 35 minutes or until filling sets.
- Let cool at room temperature, when cool cut into squares and dust with powdered sugar.
