Lemon Bars instructions

  1. Preheat oven to 350.
  2. FOR THE CRUST.
  3. Cream butter and sugar in stand mixer with paddle attachment.
  4. Combine flour and salt with mixer on low speed.
  5. Add butter until just mixed.
  6. Dump dough onto a well floured surface and gather into a ball.
  7. Flatten dough into a 13 x 9 baking dish, building up 1/2 inch on all sides to form a well.
  8. Chill for 1 hour, then bake for 15 to 20 minutes or until lightly brown.
  9. Cool on a wire rack and leave oven on.
  10. FOR THE FILLING.
  11. Whisk eggs, sugar, zest, lemon juice and flour.
  12. Pour over cooled crust and bake for 30 to 35 minutes or until filling sets.
  13. Let cool at room temperature, when cool cut into squares and dust with powdered sugar.
